Bircher Muesli

Easy breakfast solution you can prepare the night before and eat on the run. Sugar free and high in protein with cholesterol lowering benefits of oats.

Prep time: 10 mins

Serves: 4


Ingredients:

1 cup rolled oats

1-1½ cups of almond milk or coconut milk

½ cup natural/Greek yoghurt

1 apple, grated

¼ cup mixed nuts

1 tsp. cinnamon

1 tsp. chia seeds

To serve:

¼ cup of natural/Greek yoghurt

½ cup mixed berries or mango slices, sliced almonds and shredded coconut


Method:

  1. Mix oats, milk, yoghurt, apple, nuts, cinnamon and chia seeds together in a large bowl

  2. Cover the mixture and soak overnight in refrigerator or for at least 2 hours

  3. To serve, place ½ cup of bircher mixture and top with yoghurt and berries

Leftover mixture can be stored in the fridge for up to 2-3 days
